Over two days we bring elite breweries and curious palates into one vibrant, social, welcoming space to witness the full spectrum of modern craftsmanship: 100+ craft sakes, masterclasses, live DJs, Yosakoi, and a sake playground built for discovery.

01 — Craft Sake, Defined

BREWING
WITHOUT BORDERS

In Japan, “craft sake” is often brewed under a Miscellaneous Brewed Liquors (Sonota Jozo-shu) licence rather than a traditional sake licence. Because strict rules limit new sake licences, craft brewers use it to legally innovate — adding fruit, herbs, and spices, or using methods conventional sake-making forbids.

The Craft Sake Brewery Association (est. 2022) defines the genre as one that honours tradition while embracing the freedom to brew.

Beyond Japan

Traditional Nihonshu must be brewed in Japan with local ingredients. SAKERAMA celebrates the craft’s global evolution — featuring international producers like Singapore’s own Orchid Sake Brewery, alongside traditional rice-based ferments from across Asia, including Thailand’s celebrated Sato.

02 — The Spectrum

FIVE WAYS TO BREAK THE RULES

Anything beyond rice, koji, and water disqualifies a drink from being called Nihonshu. The craft sake movement thrives in exactly that space.

Botanical Hybrids

Hopped, fruited, and botanical co-ferments — brewed with hops, fruit skins, tea, herbs, or spices.

Koji-Experimental

Black, white, and all-koji styles borrowed from shochu, pushed to high-acidity, tart, creamy profiles.

Raw & Ancestral

Doburoku — thick, unpressed sake, fizzy and chewy, bottled with all its fermenting solids. A once-restricted style, reclaimed.

Kinetic Sparkles

Naturally effervescent sake — méthode traditionnelle or trapped carbonation. Alive, unstable, and still evolving in the bottle.

Alternative Koji

Koji made from alternative grains — toasted or ancient grains, sprouted brown rice — for flavours traditional sake can’t legally achieve.

YOSAKOI × SAKERAMA

Tradition isn’t a museum piece — it’s a movement. Following the same philosophy as the craft sake revolution, Yosakoi takes a classic art form and pushes it into the future. Experience Singapore’s first dedicated Yosakoi showcase: a high-energy fusion of traditional Japanese festival culture and modern beats, and the visual heartbeat of SAKERAMA.

What is Yosakoi?

Born in Kochi Prefecture in 1954, Yosakoi is an energetic and highly choreographed dance style that blends traditional movement with modern music, colourful costumes, and the distinctive clack of naruko wooden clappers. Vibrant, inclusive, and loved across generations, Yosakoi has grown into one of Japan’s most celebrated modern festival traditions.

Presented by Yosakoi dancers from Singapore and Japan, YOSAKOI LAH! is a celebration of Japanese summer festival culture, bringing together dance, music, and community in a uniquely interactive experience. More than a performance, it’s an invitation to connect, celebrate, and experience the joy of a Japanese natsu matsuri together.

Look forward to dynamic performances and interactive moments — including audience participation and Bon Odori, where everyone is welcome to join in the fun.
